Chocolate​, Orange and Goji Berry Superfood Oat Bars

When chocolate meets orange you know it will be good, but when that timeless combo is paired with goji berries and your favourite superfoods, then you know you are in for a winner.

These bars are the perfect balance between chewy and moist, and thanks to the delicious caramel notes from the dates, they bring true satisfaction and goodness. I love eating these as a healthy snack or dessert any time of the day because they are packed full of slow release energy, omega three fats and are refined sugar-free, leaving you with no excuses not to make them.

In under 30 minutes, you could have these out and cool, waiting to be eaten – they are simple enough for the biggest baking amateur, and fun treats to bake for friends, or to get the kids involved in. This chocolate, orange, and goji superfood oat bars can be altered to suit your dietary requirements and flavour preferences; if you’re gluten-free simply use gluten-free oats, if you love raisins or prefer nuts to seeds then swap those out or add them to the existing recipe, it’s really that simple!

The mix of superfood ingredients adds depth of flavour and incredible texture, along with incredible health benefits: the buckwheat adds a crunch and nutty flavours, the goji berries add the perfect sweet bite, and hemp seeds a boost of protein and healthy fats, bars that a full of all-around goodness!

Ingredients 

Makes 9 bars

2 tablespoons flax seeds

1 packed cup dates

3 cups of oats

1 teaspoon bicarbonate of soda

Large pinch of sea salt

1/2 cup goji berries or dried cranberries

2 tablespoons sunflower seeds

2 tablespoons hemp seeds

3 tablespoons buckwheat groats

Zest and juice of 2 oranges

1 teaspoon vanilla bean paste

Method

Preheat the oven to 180℃.

Next, place the dates in a bowl and soak them in hot water, and in a separate bowl mix the flaxseeds with six tablespoons of water and set them to the side.

Whilst the other ingredients soak, blend 1/2 a cup of the oats to create flour, and in a large mixing bowl combine with the remaining oats, bicarbonate of soda, salt, goji berries, seeds, buckwheat and the zest of 1 1/2 oranges.

Next, drain the dates and place them in a blender along with the juice of two oranges and vanilla paste, and blend until thick caramel-like paste forms.

Combine the date paste and dry ingredients, add the soaked flaxseeds along with the water and mix thoroughly.

Line a long loaf tin, or a square brownie tin with baking paper and press the oat mix into an even layer, place in the center of the oven and bake for 15 minutes until golden.

When the bars have cooled, melt 50g of chocolate* with 1 teaspoon of coconut oil over a bain marie, drizzle over the top of the bars and zest the remaining half of orange (I also like to sprinkle over some sea salt for some extra flavour balance).

Once the chocolate has set, cut the bars into your desired size and enjoy!

Note* if you would like to keep the recipe refined sugar-free choose sugar-free chocolate or use my ganache recipe instead.
