Like the biscuit, only better.
These nuggets of sunshine are chewy with a delicate kick from the ginger; they are perfect if you’re feeling peckish or after a gym session to refuel and replenish your strength.
Packed full of healthy fats and protein, and made from only 4 ingredients, these are achievable for every dummy out there and can be personalized to fit all tastebud expectations. I have decided to use ground ginger and shape them into bites, but feel free to add cacao, vanilla, or even use your favorite nuts and seeds.
200g of pitted dates
200g of cashews
50g of oats (use gluten-free if necessary)
2 heaped teaspoons of ground ginger
Pinch of sea salt (optional)
Soak your dates in hot water for 3 minutes (or until soft) and risen, if they are soft already you can skip this step.
Pulse the oats and cashews in a food processor to form a coarse flour.
Next, add the ginger, soft dates and sea salt, and blend until dough consistency forms.
Now be creative, press the mix into a tin, refrigerate and cut into bars, or roll into balls of your desired size. You can also chop some nuts and coat the bites in them for a crispy exterior.
Best Before: in an airtight container, these bites will keep for a good month, however, if you choose to uses fresh ingredients such as ginger or fruits, then refrigerated they will last for around a week. In all honesty, I wouldn’t worry about the time, as after 3 days you’ll be wanting to whip-up another batch!
